  • Description of the dataset: This dataset contains processed analytical data obtained from the qualitative analysis of polyphenolic compounds present in sour cherry (Prunus cerasus L.) fruit extracts using ultra-high-performance liquid chromatography coupled with quadrupole time-of-flight mass spectrometry (UHPLC-Q-TOF). The dataset includes chromatographic and mass spectrometric parameters used for the identification of secondary plant metabolites. The data comprise retention times, measured and theoretical m/z values, MS/MS fragmentation ions, mass accuracy values, and compound identification results.Five polyphenolic compounds were tentatively identified in the analyzed samples, including flavanols, anthocyanins, and flavonol glycosides.
